This shrimp fettuccine is creamy, spicy and full of amazing flavors! Enjoy it for lunch or dinner, and with loved ones or just for yourself!

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 10oz Fettuccine
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 cloves garlic, finely diced
  • 1 small red onion, sliced
  • 1/3 cup sun dried tomatoes (optional)
  • 1/3 cup seafood stock
  • 1 3/4 cups heavy cream
  • 1/2 cup grated Parmesan, optional
  • Cajun seasoning, to taste
  • Italian seasoning, to taste
  • 1 tablespoon fresh parsley, chopped

Directions

  1. In a bowl, season shrimp with all seasonings and olive oil until well coated.
  2. Cook pasta noodles according to package instructions.
  3. Heat the oil in a skillet on medium-high heat. Cook shrimp 5 minutes, 2 1/2 minutes on each side; remove from the pan and set aside.
  4. In same pan, melt butter.
  5. Add onion and sauté until translucent; add the sun-dried tomatoes and sauté for 2-3 more minutes; add garlic and cook until fragrant (about one minute).
  6. Pour in the seafood stock, and allow the sauce to reduce down slightly.
  7. Reduce heat to low, add the heavy cream, and bring to a simmer, stirring occasionally. Add additional seasoning, to taste.
  8. Stir in the parmesan cheese and simmer for a minute until cheese melts. Stir.
  9. Add the grilled shrimp back into the skillet and sprinkle with the chopped parsley, and spoon the sauce over shrimp.
  10. Toss with pasta and enjoy!
