Cilantro-Lime Cajun Roasted Wings

The freshness of cilantro, the zest of lime, and Cajun spice join forces to bring these summertime wings to life!

Hands down, favorite food of all time is wings! I can never get enough. So, I’m always looking for ways I can switch it up and create new flavors!

I coated the wings in a homemade marinade of cillantro, lime juice, lime zest. chili powder, Creole seasoning, and avocado oil, and let those flavors infuse the chicken for a few hours.

Then, I seared the wings stovetop in a cast iron skillet just to get a nice a char on both sides. From there I popped them in the oven for 20 minutes at 375 and they were done!

Ingredients

  • 3 pounds chicken wings or drummettes
  • 1/2 cup chopped fresh cilantro leaves, divided
  • 1/4 cup freshly squeezed lime juice, divided
  • 2 tablespoons avocado oil, divided
  • 1 tablespoon lime zest
  • 2 teaspoons chili powder
  • Tony Chachere’s Creole Seasoning, to taste

Directions

  1. In a bowl, combine 1/4 cup cilantro, 2 tablespoons lime juice, avocado oil, lime zest, and chili powder, and set aside
  2. Add chicken wings to a large bowl and pour in the cilantro marinade. Toss chicken until covered completely in the marinade. Season chicken with 2 teaspoons or more of the Creole seasoning. Set in fridge and let marinate for two hours or overnight.
  3. Pre heat oven to 425 degrees. Take wings out of fridge. Coat a cast iron skillet with avocado oil and set to medium high heat.
  4. Once heated, add wings to skillet and sear for 5-8 minutes on both sides. You’re not trying cooking them through at this point but just getting a nice color/char all over the wings. Place wings on a baking sheet with wire rack and place in oven. Let cook for 15 minutes, then flip and cook for another 15 minutes.
  5. Remove wings from oven, squeeze on some more lime juice and garnish with fresh cilantro
  6. Enjoy!
