Cajun Shrimp Fried Rice

What I love the most about shrimp fried rice is that you can essentially make it however you want. There aren’t any real strict rule to making this dish, which allows you to use whatever you have on hand to make it come to life.

With my Cajun spin, I use the holy trinity (onion, bell pepper, and celery), along with fresh garlic as my vegetable base. For the rice, I use basmati rice, with a natural and pleasant aroma to the meal.

I coat my shrimp in cornstarch first then I season; this allows for more of the seasoning to sticks to the shrimp, and creates a nice crust on the shrimp as it cooks.

This shrimp fried rice literally comes together in 30 minutes or less. I made it in between Zoom calls, y’all!

  1. Add enough cooking oil to shallowly cover the bottom of  a wide, medium-sized pot, and place over medium-high heat. Once heated, stir in rice to fully coat in the oil. Continue stirring for about 2-3 minutes, toasting the rice. Adjust heat if needed down to medium, as you don't want the rice to brown or burn. Pour in water or shrimp/seafood stock, and cook rice per package instructions. 

  2. In a separate large pan or a wok, melt butter over medium-high heat. Add shrimp to a bowl, and stir in the cornstarch to coat the shrimp completely. Season shrimp with all seasonings. Once butter is melted, add in shrimp. Arrange shrimp in a single layer and allow to cook for 3 minutes on each side, or until slightly browned. Remove shrimp from pan and set aside. 

  3. Once rice is done, dump the rice into a strainer and run cold water over it to stop the cooking process. Set it aside.

  4. Coat pan/wok with more cooking oil and then stir in your bell pepper, onion, and celery. Cook vegetables for 4 minutes then stir in garlic; let cook for another minute. Season vegetables with basil, thyme and Tony's seasoning. 

  5. Make a hole/circle in the middle by pushing the vegetables to the edges of the pan/woke, and crack eggs in the center. Stir eggs with a fork until scrambled completely and cooked. Then, incorporate the scrambled eggs into the vegetables. 

  6. Stir in rice until blended with eggs and vegetables. Toss in shrimp and stir into the rice mix.

  7. Top with green onions for garnish and serve.
