If you’ve ever been in New Orleans during the summer, you know how hot and humid it gets! Yet, we still find ourselves outdoors attending festivals, hosting BBQs, and sweating the summer days away!
To sustain the heat, we look for relief through foods and drinks to cool us down or at least make being outside more bearable! Cool shrimp rolls are great for those summer days when you crave something cool, refreshing, and flavorful!
Similar to the lobster rolls that are popular in the Mid-Atlantic and New England parts of country, these rolls feature fresh gulf shrimp, fresh herbs and vegetables, Cajun spices, and a hint of heat to spice things up a bit!
These spicy shrimp rolls are simple to prepare and sure to be the new backyard bbq favorite!
Spicy Shrimp Rolls
A new addition to the summertime bbq spread!
Fill a medium pot half way with salted water. Squeeze out lemon juice from halved lemons into pot and turn on high heat. Bring to a boil and add in the shrimp.
When water starts boiling again, turn off heat and let shrimp sit and cook for 3 minutes. Once fully cooked, drain the shrimp and rinse with cold water to stop the cooking process. Place shrimp in a bowl with a top and put in refrigerator.
Add the celery, bell pepper, onion, dill, Cajun and Italian seasonings, and mayo. Stir to mix and then add in lemon juice; taste and adjust seasonings as needed.
Stir shrimp into the mixture. Continue to taste and adjust all seasonings as needed. Cover bowl and refrigerate for 30 minutes.
Baste buns with melted butter and toast in oven at 350 degrees for 5-10 minutes. Stuff buns with shrimp mix and serve!
